Olive Garden Copycat Zuppa Toscana

Ingredients

  • 1.5 pounds Hot Italian Ground Sausage
  • 1.5 pints Russet Potatoes, sliced
  • 4 cups Chicken Bone Broth
  • 3 cups Fresh Kale, chopped
  • 2 cups Fat Free Fairlife Milk
  • 1 cup Water
  • 6 Garlic Cloves, chopped
  • 1 Medium White Onion, chopped
  • 1 Cube Chicken Bouillon
  • 2 tablespoons Corn Starch

Directions

  1. Start by adding your ground sausage to a large pot and brown it over medium-high heat, breaking it up into chunks as it cooks.
  2. Once your sausage is cooked through, remove it from the pot and set aside.
  3. In that same pot, add your chopped onion and cook for 1-2 minutes, then add in your chopped garlic and cook for another 30 seconds.
  4. Add in your sliced potatoes, cooked sausage, chicken bouillon, 4 cups bone broth, 1 cup water, and mix well.
  5. Bring it to a boil, then cover, reduce the heat and let it simmer for 15-20 minutes or until your potatoes are cooked through.
  6. While your soup is cooking, make your slurry by mixing 2 Tbsp of corn starch with 2 cups of milk and set aside.
  7. When your soup is done cooking, add in your kale and slurry mixture, and let it cook for 2-3 minutes.
  8. Give it a taste and add salt and pepper to preference.
